Black Beauty squash, an heirloom variety of zucchini, is known for its early production, abundant harvests, and smooth, dark green skin with a mild taste. Whether grown indoors or outdoors in rich, loamy soil, it continues to bear fruit throughout summer when picked consistently. For optimal flavor, harvest squashes when they reach 6–8 inches long. They're versatile in the kitchen—great in soups, salads, casseroles, sliced thin for dips, or layered in vegetable lasagna.
Genus: Cucurbita.
