Butternut squash grows as a vine needing lots of space and time, with fruits weighing 3–6 pounds and small seed cavities. Its sweet, dense flesh is ideal for baking. The Waltham variety, developed in Massachusetts in the 1940s, features nutty flavor, smooth tan skin, and large fruits that can be stored for up to five months. Harvest when rinds are hard and cannot be easily pierced.
