(Capsicum annuum) Pimento is a mild, sweet, heart-shaped chili pepper. Pimientos can be yellow, green, red, or maroon, starting out green before maturing. Pods are medium-sized, 3–4 inches long and 1.25 inches wide. They are enjoyed fresh, pickled, dried, in pimiento cheese, stuffed in olives, and as the primary ingredient in paprika. Pimentos taste similar to bell peppers and can range from very sweet to mildly spicy, scoring low on the Scoville heat scale at 500–1,000 units.
