Round Zucchini Squash, or Eight Ball zucchini, grows on compact bushy plants about two feet tall. Harvest when squash are 3–4 inches across, roughly a week after blooming, for the best mild, nutty flavor. Regular picking encourages more fruit. Their round shape works well for baking, stir-frying, stuffing, salads, or even zucchini bread. Maturity takes about 45 days.
Genus: Cucurbita. Type: Open-Pollinated, Heirloom, non-GMO. Origin: The modern variety was developed in Italy during the mid-19th century near Milan.
